15g (2/3 oz) of sugar for egg yolks
30g (1 oz) of honey
65g(1+1/3 oz) of cake flour
175g(6+1/4 oz) of egg white
65g of sugar for egg whites
15g (1/2 oz) of butter
35g (1+1/4oz) of whole milk
<whipped cream>
380g(13+1/2 oz) of heavy cream
38g (1+1/3 oz) of white sugar for cream
