Ingredients-------------------Toor dal - 1 cupOnion-1bigShallots- 1 cupDrumstick - 2Brinjal small - 4Tomato - 2 medium(cut into pieces)Tamarind - a gooseberry sized(soaked in water)Green chilly-4 Curry leaves-fewDry chilly- 2Sesame oil - 4-5tbspJaggery - a small pieceCoriander powder - 1tspKashmiri Chilly powder - 1tspTurmeric powder-1 1tspSalt- As requiredMustard - 1/2 tspHot water-As requiredTo Roast----------------Coriander seeds- 2tbspDry chilly-5-6Cumin seeds- 1/2 tspRoasted chana dal - 2tbspToor dal-1tbspFenugreek seeds - 1/4tspPepper corns-10noCompound Asafoetida - a small pieceCoconut grated-1/4cupCurry leaves-fewMethod--------------Heat a pan with with one teaspoon of sesame oil and roast all the ingredients under the heading'To roast' Roast till light golden colourGround it to a coarse powder once cooled and keep it asidePressure cook the Toor dal with half teaspoon of turmeric powder and required salt 4-5 whistle Mash Dal well and keep asideIn a heavy bottom vessel heat to 2-3 tablespoon of sesame oilSplutter mustard seeds once the oil is hot followed by dry Chilli and few curry leavesAdd add onion and Shallots followed by all the vegetables one by one and saute for few minutesAdd red chilli powder coriander powder turmeric powder and salt as requiredMix well and close with lid and cook for 5 minutes.Then add one glass of water and cook the vegetables for 10 minutesOnce the vegetables is cooked at the tamarind pulp according to your taste and mix wellThen add the mashed dal and the grounded masala to it, mix wellNow the sambar is very thick inconsistency, add enough hot water to it to make a thin check check the seasonings at this stage and add if any accordinglyA small piece of jaggery to enhance the taste of sambarLet it boil for few more minutes in low flameCoriander leaves and turn off the flameAdd 2 teaspoon of ghee to it which gives an immense Aroma to the sambarNow our tiffin sambar is ready serve hot with mini Idli and a teaspoon of ghee or with Dosa and masala dosaThe taste of this sambar is awesome, so friends do try this and share your feedback..#tiffinsambar #tamilrecipe #sambar kerala food sambar recipe tamil food kerala sambar
