Ingredients
-------------------
Toor dal - 1 cup
Onion-1big
Shallots- 1 cup
Drumstick - 2
Brinjal small - 4
Tomato - 2 medium(cut into pieces)
Tamarind - a gooseberry sized(soaked in water)
Green chilly-4
Curry leaves-few
Dry chilly- 2
Sesame oil - 4-5tbsp
Jaggery - a small piece
Coriander powder - 1tsp
Kashmiri Chilly powder - 1tsp
Turmeric powder-1 1tsp
Salt- As required
Mustard - 1/2 tsp
Hot water-As required

To Roast
----------------
Coriander seeds- 2tbsp
Dry chilly-5-6
Cumin seeds- 1/2 tsp
Roasted chana dal - 2tbsp
Toor dal-1tbsp
Fenugreek seeds - 1/4tsp
Pepper corns-10no
Compound Asafoetida - a small piece
Coconut grated-1/4cup
Curry leaves-few

Method
--------------
Heat a pan with with one teaspoon of sesame oil and roast all the ingredients under the heading'To roast'
Roast till light golden colour
Ground it to a coarse powder once cooled and keep it aside
Pressure cook the Toor dal with half teaspoon of turmeric powder and required salt 4-5 whistle
Mash Dal well and keep aside
In a heavy bottom vessel heat to 2-3 tablespoon of sesame oil
Splutter mustard seeds once the oil is hot followed by dry Chilli and few curry leaves
Add add onion and Shallots followed by all the vegetables one by one and saute for few minutes
Add red chilli powder coriander powder turmeric powder and salt as required
Mix well and close with lid and cook for 5 minutes.
Then add one glass of water and cook the vegetables for 10 minutes
Once the vegetables is cooked at the tamarind pulp according to your taste and mix well
Then add the mashed dal and the grounded masala to it, mix well
Now the sambar is very thick inconsistency, add enough hot water to it to make a thin check check the seasonings at this stage and add if any accordingly
A small piece of jaggery to enhance the taste of sambar
Let it boil for few more minutes in low flame
Coriander leaves and turn off the flame
Add 2 teaspoon of ghee to it which gives an immense Aroma to the sambar
Now our tiffin sambar is ready serve hot with mini Idli and a teaspoon of ghee or with Dosa and masala dosa
