idli dosa batter recipe, how to make perfect batter for Soft and spongy dosa idli in mixie - mixer/grinder
ingredients:
I used a small measuring cup with came along with my rice cooker.
2 cups - single polished white rice (the brown specks is the bran left on the rice, hence this is not white in color)
1/2 cup black urad dal
1/2 cup white urad dal (note if not using black urad dal, then use 1 cup plain white urad dal).
2 1/2 tbsp methi seeds
3/4 tsp pink himalayan salt
1/2 cup cooked rice

soak for atleast 2 hours, then rinse and drain the water until the water is clear.
----
Grind the soaked ingredients with salt and cooked rice.
Once ground, keep it to ferment overnight.
You can make soft idlis and crispy dosas with this batter. This will keep good for up to 4 days in the fridge.
