Presenting a desi Risotto to treat your taste buds and comfort you on a chilly winter night!INDIAN STYLE RISOTTOIngredients1½ cups Arborio rice2 tbsps ghee1 inch cinnamon stick8-10 black peppercorns1 bay leaf1 star anise2 medium onions, sliced1 tbsp ginger-garlic paste8-10 small cauliflower florets1 medium carrot, peeled and cut into ½ cm cubes8-10 French beans, stringed and cut into ½ cm piecesSalt to taste¼ tsp turmeric powder¾ tsp red chilli powder4-5 cups vegetable stock1 tbsp butter¼ cup boiled green peas2 tbsps fresh cream1 tbsp parmesan cheese powder + to sprinkle½ tsp Tata Sampann Garam MasalaCoriander sprig for garnishMethod1. Heat ghee in a pan. Add cinnamon, peppercorns, bay leaves, star anise and sauté till fragrant.2. Add onions and sauté till translucent. Add ginger-garlic paste and sauté for 30 seconds.3. Add cauliflower, carrot, French beans and mix well.4. Add Arborio rice and mix well.5. Add salt, turmeric powder, red chilli powder and mix well. 6. Add stock and mix well. Cook on medium heat for 10-12 minutes.7. Add butter, green peas, fresh cream and parmesan cheese powder and mix well.8. Add Tata Sampann Garam Masala and mix well.9. Transfer in a serving plate.
