Puliodharai! Who doesnt love a delicious bowl of Puliodharai, especially the taste of a temple style Puliodharai! However, the drudgery of the process of making Pulikachal always puts us off from the whole idea! So heres a #Meenama recipe of #InstantPulikachal or #InstantPuliodharaiPowder from #SujanFunKitchen
Instant Pulikachal Powder or Puliodharai Powder:
Tamarind - 1 measure
Black or white til - 1 measure
Coriander seeds - 1 measure
Chana dal - measure
Black pepper- measure
Methi seeds - to taste
Dry red chillies - 20 or 24
Turmeric powder - to taste
Kashmiri chilli powder - as reqd for colour
Asaefotida - as reqd for flavour
Til oil as reqd
Rock salt as reqd
Method:
Clean the tamarind of its seeds and fibre keep aside
Now take a heavy bottomed pan
Add til oil spoon by spoon and start roasting each ingredient one by one except turmeric, red chilli powder, asaefotida and salt
Once all ingredients are roasted well over sim flame, switch off the flame
Now, add turmeric powder, Kashmir chilli powder, asaefotida and salt and toss lightly in the remaining pan heat
Transfer everything together into a wide plate to cool to room temperature
Then grind the roasted ingredients to a smooth and fine powder
Store it in the fridge for few weeks
How to use the Instant Pulikachal Powder:
Keep a bowl of cooked rice ready
Heat several spoons of til oil in a big Kadai
Splutter mustard seeds
Lower flame and add cashews or groundnuts and fry till golden
Add curry leaves too
Switch off flame
Add 2 heaped tbsps of the Instant Pulikachal Powder and saut over the remaining Kadai heat
Now its time to add the cooked rice
Toss everything well together so that you have the most yummy Puliodharai ready for your friends & family
