INGREDIENTS
1. Tamarind - 1/2 Kg
2. Salt - 5 Teaspoons
3. Sugar - 3 Teaspoons
4. Turmeric Powder - 1 Teaspoon
5. Cumin-Fenugreek Seeds Powder - 1 Teaspoon
6. Coriander Seeds Powder - 2 Teaspoons
7. Sesame Seeds - 2 Teaspoons
8. Curry Leaves - 1/2 Cup

INGREDIENTS for tempering
1. Dried Chillies - 10-15
2. Mustard Seeds - 2 Teaspoons
3. Cumin Seeds - 2 Teaspoons
4. Bengal Gram - 3 Tablespoons
5. Black Gram - 3 Tablespoons
6. Curry Leaves
7. Groundnuts - 1/2 Cup

Letís see how to make instant tamarind rice (pulihora) mix. We'll see how to make the mix per 1/2 kg tamarind.
Turmeric powder could be added while boiling or even in the tempering.
Wash and oak tamarind for 1/2 hour to 1 hour. This is to juice the tamarind.
Don't add too much water. Only till the tamarind sinks.
Adding too much water will make the tamarind juice thicker which will result in more boiling time for tamarind.
Juice the tamarind so that there are no seeds or stems in the thick paste.
Strain all the tamarind, add a little water and strain it again.
After juicing all the tamarind, boil the tamarind.
Boiling the tamarind is a time taking process. Boil till the tamarind paste becomes very thick.
Stir so that the base doesnít burn.
As the tamarind juice starts to thickens, add 5 teaspoons salt or salt to taste.
Add 3 teaspoons sugar, 1 teaspoon cumin-fenugreek seeds powder, curry leaves and mix.
Add 2 teaspoons coriander seeds powder and 2 teaspoons sesame seeds powder.
Mix and boil till the tamarind thickens.
After tamarind thickens, cut off the stove.
Boil till required consistency is obtained.
Letís preparing tempering now.
Heat 3 tablespoons oil in pan.
Add mustard seeds, cumin seeds, groundnuts and fry.
As groundnuts start to give a nice aroma, add black gram and fry.
Add bengal gram
Add dried chilli and fry till it changes colour.
Add curry leaves and fry.
Add turmeric powder. Turmeric powder could be added while boiling tamarind also.
Mix this tempering to the prepared tamarind paste.
These both could be mixed or stored separately.
Tamarind paste could be easily stored for 2-3 months.
Mixing the grams and groundnuts in the tamarind paste will make them soft overtime.
This could be prevented by storing the tamarind paste and tempering in two different boxes.
Also, tempering could be prepared later while preparing the rice.
Here I'm mixing them.
Store them in an air tight container and put it in the fridge.
This could be instantly mixed in rice - ready to eat.
Cook rice. Here I added turmeric powder and cooked it.
Add 2-3 tablespoons instant tamarind rice mix and mix.
Tamarind paste could be easily stored for 2-3 months in fridge. It will stay for 20-30 days without fridge.
