Kimchi Fried Rice Chef Harpal Singh @riceparliament

Kimchi fried rice is a dish made by mixing cooked white rice, kimchi, and other associated ingredients such as vegetables, meat, or seafood. It becomes more flavorful and nutritious compared to plain rice by consuming the kimchi that imparts spicy and sour flavors to the dish.

Ingredient
1 Cabbage
2 tbsp Salt
Water as required
3 tbsp Vinegar
2 tbsp Red Chilli paste
1 tbsp Sugar
1 tsp Sesame seeds
2 tbsp Oil
1 tbsp Ginger chopped
1 tbsp Garlic chopped
4-5 Green Chilli chopped
1 Onion chopped
1 Carrot grated
1 Green capsicum julienne
1 Yellow capsicum julienne
1 Red capsicum julienne
1 tbsp Soya sauce
2 tbsp Tomato ketchup
1 tbsp Red Chilli paste
1 cup Parliament golden shella basmati rice boiled
Salt to taste
1 tbsp Spring onion chopped
1 tbsp Sesame oil
Spring onion chopped for garnish
Sesame seeds for garnish
Method
1. Take a medium size cabbage cut into a cube and side out in a mixing bowl.
2. In that bowl of cabbage add salt and rub until change colour of cabbage.
3. Now wash off the excess salt and drain the excess water.
4. Add vinegar, red Chilli paste, sugar and sesame seeds mix well.
5. Place a kadai on medium flame and heat the oil, add chopped ginger, chopped garlic, chopped green chili and chopped onion saut for a minute.
6. Now add grated carrot, julienne green capsicum, julienne yellow capsicum, julienne red capsicum, soya sauce, tomato ketchup, red chili paste, boiled parliament golden shella basmati rice and salt to taste.
7. Now add kimchi with water and mix well.
8. In last add chopped spring onion and sesame oil tossed well.
9. Side out in serving plate and garnish with chopped spring onion and sesame seeds.
