Kurkure Paneer | Sanjeev Kapoor Khazana

Paneer coated in a flavourful marinade, vermicelli and deep fried till golden brown.
KURKURE PANEER

Ingredients

200 grams cottage cheese (paneer)
Batter
4-5 dried red chillies
1 inch ginger
6-7 garlic cloves
1 tbsp coriander seeds
10-12 black peppercorns
1 tbsp yogurt
1½ tbsps lemon juice
2 tbsps rice flour
Salt to taste
1 cup roasted vermicelli
Oil for deep frying
Tomato ketchup to serve

Method

1. Take dried red chillies, ginger, garlic, coriander seed, black peppercorns in a blender. Add sufficient water and blend to a fine paste. Transfer in a bowl.
2. Add yogurt, lemon juice, rice flour and salt in bowl. Mix well. Add sufficient water and make a semi-thick batter.
3. Cut paneer into 1½ inch cubes.
4. Take roasted vermicelli in a bowl and crush it.
5. Cover paneer cubes with the batter and coat well with vermicelli. Set aside to refrigerate for 30 minutes.
6. Heat sufficient oil in a kadai. Deep-fry the paneer cubes in hot oil till crisp and brown on all the sides. Drain on an absorbent paper.
7. Serve hot with tomato ketchup.
