Paneer coated in a flavourful marinade, vermicelli and deep fried till golden brown.KURKURE PANEER Ingredients200 grams cottage cheese (paneer)Batter4-5 dried red chillies1 inch ginger6-7 garlic cloves1 tbsp coriander seeds10-12 black peppercorns1 tbsp yogurt 1½ tbsps lemon juice 2 tbsps rice flour Salt to taste1 cup roasted vermicelliOil for deep fryingTomato ketchup to serveMethod1. Take dried red chillies, ginger, garlic, coriander seed, black peppercorns in a blender. Add sufficient water and blend to a fine paste. Transfer in a bowl.2. Add yogurt, lemon juice, rice flour and salt in bowl. Mix well. Add sufficient water and make a semi-thick batter.3. Cut paneer into 1½ inch cubes.4. Take roasted vermicelli in a bowl and crush it.5. Cover paneer cubes with the batter and coat well with vermicelli. Set aside to refrigerate for 30 minutes. 6. Heat sufficient oil in a kadai. Deep-fry the paneer cubes in hot oil till crisp and brown on all the sides. Drain on an absorbent paper. 7. Serve hot with tomato ketchup.
