INGREDIENTS

Donuts
1 1/4 cups whole milk, divided
1 tablespoon plus 1½ teaspoons active dry yeast
4 1/2 cups bread flour (or a mixture of half all-purpose flour, half bread flour), divided
1/2 cup granulated sugar, plus more for rolling
1/2 vanilla bean, split lengthwise, or 1 teaspoon finely grated lime zest
2 large eggs
3 large egg yolks
1 teaspoon kosher salt
1 stick (4 ounces) unsalted butter, room temperature
Vegetable oil, for frying

Strawberry Jam and Assembly
2 pounds strawberries, hulled
2 cups granulated sugar
1 tablespoon fresh lemon or lime juice
1 pinch kosher salt
