Rub in the butter, then mix in enough water to form a pliable dough.Knead for 10 mins, then set asideTo Prepare FillingTo make the filling, melt butter in a frying pan. Add onion, garlic, chillies and ginger and fry for 5-7 mins till onion is golden.Stir in turmeric and chill powder, add potatoes, meat and salt. Fry, stirring till meat and potatoes are cooked and mixture is quite dry.Stir in garam masala and lemon juice and cook for 5 mins. Remove form heat and allow to cool.To Wrap SamosaDivide the dough into 15 balls flatten each ball and roll out to a paper thin circle about 10 cm diameter. Dampen the edges of each circle with water. Fill in filling then pinch down the edges to seal securely.Deep fry the samosas in batches in hot oil for 2-3 mins or till golden brown.
