How to make samosas

Ingredients for the Wrapper

250 g plain flour
1/2 tsp salt
25 g butter
4-6 tbsp water

Ingredients for the Filling

30 g butter
1 onion, finely chopped
2 cloves garlic, crushed
2 green chillies, seeded and chopped
2 cm ginger, grated
1/2 tsp ground turmeric
1/2 tsp chillies powder
370 g lean minced beef or lamb
3 potatoes, peeled, cubed into 1 cm cube
1 tsp salt
2 tsp garam masala
1/2 lemon, juiced
oil for deep frying
Make 28 pieces

Sift the flour and salt into a bowl. Rub in the butter, then mix in enough water to form a pliable dough.
Knead for 10 mins, then set aside

To Prepare Filling

To make the filling, melt butter in a frying pan. Add onion, garlic, chillies and ginger and fry for 5-7 mins till onion is golden.

Stir in turmeric and chill powder, add potatoes, meat and salt. Fry, stirring till meat and potatoes are cooked and mixture is quite dry.

Stir in garam masala and lemon juice and cook for 5 mins. Remove form heat and allow to cool.

To Wrap Samosa

Divide the dough into 15 balls flatten each ball and roll out to a paper thin circle about 10 cm diameter. Dampen the edges of each circle with water. Fill in filling then pinch down the edges to seal securely.

Deep fry the samosas in batches in hot oil for 2-3 mins or till golden brown. Drain on kitchen towel and serve.

Cook's Tips

For the dough can get substitute of spring rolls wrapper from Asian supermarket. If this is not available may try to use filo pastry sheets.
