If youre limited on time and ingredients, try out this one pot pasta meal prep recipe! * 1 box Penne Pasta* 4 tablespoons unsalted butter* 3 tablespoons olive oil* 4 tbsp garlic cloves, minced* Juice from 1/2 a large lemon* Salt and pepper to taste* Fresh parsley leaves, choppedCook the pasta according to package instructions. Reserve 1 cup of pasta water and drain the rest. In the same pot, heat the butter and olive oil until the butter has melted and add the garlic cloves. Add the lemon juice and 3/4 cup of the reserved pasta water. Add back the drained pasta and mix together. Season with salt and pepper and garnish with parsley. Serve this with your favorite protein, I used chicken!
