A piping-hot plate of momos can never go wrong with some spicy Schezwan chutney.MOMOSIngredients1 cup chicken minceDough1 cup refined flour (maida)Salt to tasteStuffing1 small onion, choppedSalt to tasteCrushed black peppercorns to taste1 tsp sesame oil1½ tsps soy sauce2 tbsps chopped fresh coriander leaves 1 tsp finely chopped garlic2 tsps red chilli sauceSchezwan sauce to serveMethod1. For the dough, add refined flour, salt and sufficient water in a large bowl and knead to a semi-stiff dough. 2. For the stuffing, take chicken mince in another bowl, add onion, salt, crushed black peppercorns, sesame oil, soy sauce, chopped coriander and garlic and mix till well combined.3. Add red chilli sauce and mix well. Set aside.4. Lightly knead the dough and divide into small portions. Roll each portion in a ball.5. Roll the dough balls into small discs. Stuff each disc with a portion of the prepared chicken mixture and shape them into momos. 6. Heat sufficient water in deep pan, place the momos basket lined with parchment paper on it and arrange the prepared momos in it and steam for 10-12 minutes.7.
