A protein-packed curry prepared with moong sprouts. Pair it with steamed rice and enjoy a hearty meal!

MOONG SPROUT CURRY

Ingredients

1½ cups sprouted green moong
1 medium onion
2 tsps oil
½ tsp mustard seeds
1 tsp cumin seeds
A pinch of asafoetida
8-10 curry leaves
1 tsp Tata Sampann Coriander Powder
Salt to taste
1 tsp red chilli powder
½ tsp turmeric powder
1 tbsp goda masala
1 tbsp chopped jaggery
½ cup scrapped coconut + for garnish
2 tbsps fresh coriander chopped + for garnish
Steam rice for serving

Method

1. Chop onions and set aside.
2. Heat oil in a nonstick pan, add mustard seeds and once it splutters add cumin seeds, asafoetida, curry leaves and onions, sauté till golden brown in colour.
3. Add Tata Sampann Coriander Powder, salt, red chilli powder, turmeric powder, goda masala, moong sprouts and 2½ cups water, allow to boil.
4. Add jaggery and cook for 10-12 minutes. Add coconut and coriander, mix well.
5. Serve hot with steam rice.
