Mutton Makhani Achari Handi

Ingredients for Mutton Marination:
Mutton boneless 800 g
Salt 1 tsp
Red chili powder 1 tbsp
Ginger paste 1 tbsp
Garlic paste 1 tbsp
Oil 2 tbsp

Ingredients for Achari Masala:
Nigella seeds 1 tbsp
Fennel seeds 1 tbsp
Lemon juice 3 tbsp
Coriander seeds 1 tbsp
Dried fenugreek seeds 1 tbsp
Red chili flakes 1 tbsp
Red chili powder 1 tbsp
Turmeric powder 1 tsp
Mustard seeds 1 tsp
Salt 1 tsp

Ingredients for Mutton Makhani Achari Handi:
Butter 1/2 cup
Oil 3 tbsp
Onion (chopped) 1 cup
Cumin seeds 1 tbsp
Ginger garlic paste 1 tbsp
Marinated mutton
Tomato puree 1 cup
Achari masala 2 tbsp
Water 1 cup
Lemon juice 1 tbsp
Achari chilies 6-7
Yogurt 1 cup
Cream 1/2 cup

Directions for Mutton Marination:
1. In a bowl add boneless chicken, red chili powder, salt, ginger paste, garlic paste and oil. Mix it well, marinate it for 30 minutes.
Directions for Achari Masala Preparation:
2. Now in a grinder add nigella seeds, fennel seeds, coriander seeds, dried fenugreek seeds, red chili flakes, red chili powder, turmeric powder, mustard seeds, salt and grind it well. Mix it well.
3. Add this prepared masala in a bowl and add lemon juice to it. Mix it well.
4. Now take green chilis slit it and deseed it. Fill it with this prepared achari masala. Set aside.
Directions for Mutton Makhni Achari Handi Preparation:
5. Now in a preheated pot add butter, oil and add cumin seeds, onion. Saut until translucent. Add ginger garlic and cook for a few seconds.
6. Now add marinated mutton and cook until mutton changes color. Now add tomato puree and cook for 3-4 mins. Now add water and cover and cook for 20-25 mins or until meat is fully done.
7. Add yogurt and cook until oil separates. Add lemon juice and give it a good mix.
8. Then add cream and cook for 2-3 mins. add achari masala filled green chilies and cook for 1-2 mins.
9. Mutton Makhani Achari Handi is ready to serve.
