Breadfruit fritters - deep-fried breadfruit slices marinated in spices and coated with semolina are an interesting accompaniment to usual meals.

NEER PHANSACHE KAAP

Ingredients

1 small jackfruit (neer phanas), peeled, cut into wedges and soaked
Oil for shallow-frying
Salt to taste
Juice of ½ lemon
2 tsps ginger-garlic paste
1 tsp red chilli powder
½ tsp turmeric powder
1 teaspoon coriander powder
½ tsp cumin powder
½ cup semolina
2 tbsps rice flour

Method

1. Take drained jackfruit wedges in a bowl.
2. Heat some oil in a non-stick pan.
3. Add salt, lemon juice, ginger-garlic paste, chilli powder, turmeric powder, coriander powder and cumin powder to jackfruit and mix well.
4. Take semolina on a plate. Add rice flour and salt and mix well.
5. Coat the marinated jackfruit wedges with semolina mixture and shallow-fry in hot oil on low heat till golden and crisp from both sides. Drain on absorbent paper.
6. Serve hot.
