Niramish Mangsho | Chef Ananya Banerjee

To celebrate the auspicious festival of Durga Pujo, Bengalis usually eat a special kind of sacred mutton curry, called Niramish Pathar Jhol or Niramish Mangsho: the vegetarian mutton. Although Durga Pujo has ended but you can make this recipe now and enjoy the prashad!

Ingredients:

• 500 gms Mutton
• 1tsp turmeric powder
• 1tsp red chilli powder
• 1tsp cumin powder
• 1tsp coriander powder
• 1 cup yogurt
• ½ cup raw papaya paste
• ½ tbsp ginger paste
• ½ tsp black pepper powder
• Cardamom-3-4 whole pieces
• Cinnamon-2-3 Small pieces
• 2 Bay leaves
• 1tsp garam masala powder
• Tsp ghee
• 6-7 tbsp mustard oil
• Salt to taste

Method:

1. Marinade to Mutton pieces with yogurt, papaya paste turmeric, coriander and cumin powder with the 1tbsp raw mustard oil and salt for 2 hours.

2. Peel the skin of the potato and keep it aside.

3. Make a paste using some water with ginger paste, coriander powder chilly powder and turmeric block pepper powder and mix well and keep aside.

4. Heat up 4tbs oil and ghee in a pan add bay leaf cardamom, cinnamon and sugar and dry red chilly. Let the sugar caramelizes. Now add the marinated Mutton pieces and stir-fry on a high for 3-4 minutes.

5. Pour in 3cup of water and pressure cook for 4-5 whistles. Add garam masala powder and remaining ghee.
