It is surprising to know that Haleem actually has Persian roots. It is eaten in plenty of other parts of the world but most commonly by Muslims, especially in the holy month of Ramadan as well as in Ashura days 9th and 10th Muharram.

Ingredients of Haleem Recipe ||
With lentils, spices and broken wheat, it is a slow-cooked / pressure cooked delicacy usually enjoyed during Eid festivities.

How to Make Haleem ||
1. Wash and soak all the lentils and broken wheat (porridge) together for 1-2 hours
2. Take a heavy bottom handi / pressure cooker and add ghee / oil to temper it with whole spices - (mentioned in video)
3. Add the lamb / boneless meat along with all the powdered spices, until it is done or pressure cook all the ingredients along with meat for 30-35 minutes
4. Drain the water from the lentils (soaked earlier) and add it to the pressure cooker (pressure cook 25-30 minutes)
5. Mix both meat and lentils and cook until smooth. You can blend for a more smoother texture as well
6. We added a special TARKA (watch video for complete recipe)
7. Check for the seasoning and serve with the choice of breads

TIPS ||
This is Mutton / beef Haleem recipe but you can use chicken as well
This is also called raishy wala haleem
Haleem / Daleem is quick thing and many people prefer ready made spice mix. So it’s up to you what you prefer ready made spice mix or homemade. We used home made spices but still this is very easy and quick but you may skip it and use ready made spice mix, if you find that a hassle.
One of the most important tip is wheat should be fully cooked before you blend it. And blend it very well or the texture will not be smooth.
Spices are important so add extra red chilli if you like spicy Haleem.
We added Green Chilli (3-4) but you can add more if you like rich green chilli flavour

WARNING ||
While using Pressure Cooker be attantive, sometimes particles of wheat porriadge stuck inside cooker cover which can blast if not handled.
