Paneer Corn Bread Pakoda | Holi Special | Sanjeev Kapoor Khazana

White bread slices sandwiched with paneer and corn mixture, dipped into gram flour batter and deep fried.

PANEER CORN BREAD PAKODA

Ingredients

200 grams cottage cheese (paneer), grated
1 cup boiled corn kernels
8 white bread slices
Readymade gram flour (besan) batter as required
1 tablespoon oil
2 teaspoons garlic paste
¼ teaspoon turmeric powder
½ teaspoon asafoetida (hing)
1-2 green chillies, chopped
Salt to taste
Oil for deep-frying

Method

1. Heat oil in a non-stick pan. Add garlic paste and sauté for 30 seconds.
2. Add corn kernels, mix and sauté for 1-2 minutes. Add turmeric powder, asafoetida powder, green chillies and salt, mix well and sauté for 2 minutes.
3. Add cottage cheese, mix and cook for 1-2 minutes. Remove from heat and set aside to cool.
4. Top 4 bread slices with a generous portion cottage cheese mixture and cover with remaining bread slices.
5. Heat sufficient oil in a kadai.
6. Cut sandwiches into triangles, dip in the batter and deep-fry in hot oil till golden brown. Drain on absorbent paper.
7. Serve hot with tomato ketchup.
