Let the aroma of spices and the richness of paneer tantalize your taste buds, while the ProV Raisins add that touch of natural sweetness.PANEER KISHMISH TIKKIIngredients250 grams cottage cheese (paneer)2-3 tbsps Pro V Select Indian Whole Natural Raisins (kishmish)2 medium potatoes cup cream cheeseA pinch of green cardamom powder2 green chillies, chopped3 tbsp chopped fresh coriander leavesSalt to taste1 cup fresh breadcrumbs1 tsps cumin seeds1 tsps garam masala powder1 tsps red chilli powder1 inch ginger, choppedOil for shallow fryingOnion rings for servingLemon wedges for servingFresh mint sprigs for servingGreen chutney for servingMethod1. Transfer the potatoes in a pressure cooker, add water, cover the lid and cook on medium heat till the pressure is released 3-4 times. Allow the pressure to settle completely.2. Chop 2-3 tbsps Pro V Select Indian Whole Natural Raisins.3. Take cream cheese in a bowl. Add chopped raisins, green cardamom powder, green chillies, 1 tbsp coriander and salt and mix well. This is the stuffing.4. For tikki, crumble cottage cheese in a bowl. Peel the boiled potatoes and mash directly in the bowl.5. Add fresh breadcrumbs, cumin seeds, salt, garam masala powder, ginger, remaining coriander and mix well.6. Divide both the cottage cheese mixture and the cream cheese stuffing into equal portions.7. Take a portion of the cottage cheese mixture and roll into a ball. Make a cavity in the centre and stuff with cream cheese stuffing. Gather the edges and seal properly. Flatten each portion to make a tikki.8. Heat sufficient oil in a shallow nonstick pan. Place the tikkis and shallow fry on medium heat for 2-3 minutes on each side. Drain on an absorbent paper.9.
