PESTO SALAD IN PARMESAN BOWLS Ingredients1 tablespoon pesto10-12 cherry tomatoes1 medium cucumber, peeled1 small onionRocket leaves as requiredGrated parmesan cheese as required Fresh mozzarella cheese as required Method1. To make parmesan bowls, heat a non-stick tawa. Place small portions of parmesan cheese on it, spread in a disc and heat till the cheese melts. Remove from heat and place the disc over a glass bowl and let the cheese take up the shape of the bowl.2. Halve cherry tomatoes. Slice and halve cucumber. Halve, peel and cut onion into juliennes. Transfer the vegetables in a bowl.3. Add pesto and toss well. 4. Place the parmesan bowls on a serving platter. Line each with a few rocket leaves and fill with the pesto salad. 5. Cut some mozzarella cheese into small pieces and place on top of the salad. Serve immediately.
