There has been a lot of dishes with a potato base, however never has there been a potato barfi! Here’s the recipe to make potato barfi. POTATO BARFIIngredients2 cups fresh grated coconut2 cups sugar3 medium potatoes, boiled2 tablespoons milk powderPinch of cardamom powder1 tablespoon gheeMethod 1. In a mixing bowl, combine the coconut and sugar and set aside for 10-15 minutes till the sugar starts leaving water.2. In another mixing bowl, grate the potato, add the milk powder and cardamom powder and mix well. Combine both the mixtures.3. Heat a nonstick pan, cook the mixture and cook the mixture on low heat, stirring continuously until the mixture starts to thicken.4. Add half the ghee and continue cooking till the mixture starts to leave the sides of the pan.5. Grease a barfi tray with ghee and pour the cooked mixture and spread evenly.
