Potato Rosti/ Potato Pancake is a quick and easy breakfast recipe made by frying potato & other vegetables together.

Ingredients:
Potatoes, grated & soaked
1/2 cup Cauliflower, grated
2 Spring Onions, finely chopped
2 Green Chillies, finely chopped
1/4 tsp Pepper powder
1 tsp Oil
1 tbsp Rice Flour
2 tbsp Corn Flour
Oil for frying.

Method of preparation:
Squeeze out all the water from the potatoes and spread it on a paper napkin.
Pat dry the potatoes and remove it out in a bowl.
Add cauliflower, spring onions, green chillies, pepper powder, oil and toss all the ingredients together.
Add rice flour, corn flour, give it a final mix.
Remove a small portion of the mixture in a bowl, season it with salt and give it a good mix.
Heat a pan and grease it with a generous amount of oil.
Take a small portion of the potato mixture and spread it out on a pan.
Press them nicely, let them cook on low flame till the bottom is nice and brown.
