Prawns tossed in spicy black bean sauce.PRAWN IN BLACK BEAN SAUCEIngredients10-12 jumbo prawns, shelled and deveined3 tablespoons black bean sauce2 tablespoons soy sauceSalt to taste1 tablespoon oil 1-2 fresh red chillies, diagonally sliced1 tablespoon chopped garlic½ cup seafood stock1 medium onion, cut into cubes and layers separated1 medium green capsicum, cut into cubes1 tablespoon cornstarch½ teaspoon sugar1 tablespoon crushed peanuts5-6 basil leaves + for garnishingMethod1. Take prawns in a bowl. Add 1 tablespoon soy sauce and salt and mix well. Set aside to marinate.2. To prepare sauce, heat oil in a non-stick pan. Add red chillies and garlic and sauté till garlic turns golden. 3. Add marinated prawns and toss to mix. Add black bean sauce, remaining soy sauce and seafood stock and mix well. 4. Add onion and capsicum, mix and cook for a minute.5. Dissolve cornstarch in some stock to make a smooth slurry, add to the pan and mix well. Add sugar and peanuts and mix well. Cook for a minute. 6. Roughly chop basil leaves, add to sauce and mix well.7.
