PROTEIN PULAO

Ingredients

150 grams cottage cheese (paneer), cut into1 inch cubes
100 grams soya chunks, soaked in milk
1½ cups basmati rice, soaked and drained
1 tbsp ghee
4-5 black peppercorns
1 bay leaf
3-4 cloves
2 green cardamoms
1 tsp cumin seeds
1 inch ginger
1 large onion, sliced
1 large tomato, sliced
Salt to taste
8-10 button mushrooms, quartered
1 tsp red chilli powder
½ tsp turmeric powder
1 tbsp Tata Sampann Paneer Masala
2 tbsps chopped fresh coriander leaves
Fresh coriander sprig for garnish
Raita to serve

Method

1. Heat in a deep non-stick pan, add black peppercorns, bay leaf, cloves, green cardamoms and cumin seeds and sauté till fragrant.
2. Add ginger and sauté for a minute. Add onion and sauté till golden brown.
3. Add tomato and salt and mix well. Add mushrooms and mix, cover and cook for 3-4 minutes. Add red chilli powder, turmeric powder and Tata Sampann Paneer Masala and mix well.
4. Add soya chunks and reserve the milk and mix till well combined, add basmati rice and chopped coriander leaves and mix well.
5. Mix together the reserved milk and water to get 2½ cups of the liquid. Add the prepared liquid in the pan, cover and cook till the mixture comes to a boil.
6. Add cottage cheese cubes and gently mix, cover and cook for 10-12 minutes.
7. Transfer on to a serving plate and garnish with coriander sprig. Serve hot with raita.
