PUNJABI CHOLE RECIPE
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4

Ingredients
For Cooking Chole
2 cups Chickpeas (soak overnight)
1 inch Ginger (peeled & sliced)
2 no. dry Kashmiri red chili,
2-3 no. Bay leaf,
1 inch Cinnamon stick,
Salt to taste,
3-4 cups Water,
tsp Turmeric powder,
tsp Degi red chili powder,
2-3 tbsp Ghee,

For Masala
1 tbsp Coriander seeds,
4-5 no. Black cardamom,
1 heaped tbsp Black peppercorns,
1 tsp Cumin seeds,
6-7 no. Cloves,
1 no. Mace,
4-5 no. Green cardamom,
tsp Carom seeds,
tsp Asafoetida,
2-3 no. Bedgi red chili,
1 tbsp dry Pomegranate seeds,
1 tbsp dry Fenugreek leaves,
Salt to taste,

For Punjabi Chole
2 tbsp Oil,
1 tbsp Ghee,
1 tsp Cumin seeds,
2-4 no. Garlic cloves,
inch Ginger (peeled & chopped)
3-4 medium Onions, grated,
3-4 no. Green chillies (less spicy & finely chopped)
2 tbsp Tender Coriander stems, finely chopped,
2 tbsp Prepared Masala,
1 tsp Turmeric powder,
1 tsp Degi red chili powder,
2 cups Curd, beaten,
Cooked Chole,
Water as required,
1 tbsp Coriander leaves, chopped,
1 medium Tomato, diced,

For Garnish
Coriander sprig,

Process
For Cooking Chole
In a pressure cooker, add chickpeas, ginger, dry kashmiri red chillies, bay leaf, cinnamon stick, water, salt to taste, turmeric powder, degi red chili powder, ghee and mix it well.
Cover it with the lid and cook till 3-4 whistles.
Mash the 20% chickpeas with the help of a ladle and keep it aside for further use.

For Masala
In a pan, add coriander seeds, black cardamom, black peppercorns, cumin seeds, cloves, mace, green cardamom, carom seeds, asafoetida, bedgi red chili and dry roast them for 2-3 minutes.
Add dry pomegranate seeds, dry fenugreek leaves, salt to taste and toss it for a minute.
Transfer it to a mixer grinder jar and grind it into fine powder.
Keep it aside for further use.

For Punjabi Chole
In a kadai, add oil, ghee, once it's hot, add cumin seeds and let it splutter.
Add garlic, ginger, onions and saute until golden in color.
Add green chillies, coriander stems, prepared masala and cook it for a while.
Add turmeric powder, degi red chili powder, curd and cook it well.
Add cooked chole, water, cover it with the lid and let it cook for 10-15 minutes on medium flames.
Finish it with coriander leaves, tomato and mix it well.
Transfer it to a serving bowl or dish and garnish it with coriander sprig.
Serve hot with puri or roti.
