A flavourful rice preparation, this Quick Chicken Pulao can be made in a jiffy. An extremely hearty dish, this is a must-try recipe.

QUICK CHICKEN PULAO

Ingredients

1½ cups Basmati rice, soaked for 15-20 minutes and drained
2 boneless chicken breasts, cut into ½ inch pieces
2 medium onions, peeled and sliced
3 tablespoons ghee
3 cloves
2-3 green cardamoms
5 black peppercorns
1 bay leaf
1 teaspoon cumin seeds (jeera)
1 tablespoon ginger-garlic paste
2-3 tablespoons yogurt
½ teaspoon garam masala powder
Salt to taste
1 chicken stock cube powder
Fresh coriander sprig for garnishing
Chilled yogurt for serving

Method

1. Heat ghee in a deep non-stick pan. Add cloves, green cardamoms, peppercorns, torn bay leaf and cumin seeds and sauté till fragrant and cumin seeds change colour.
2. Add onions and sauté on high heat for 2-3 minutes. Add ginger-garlic paste and yogurt and sauté on high heat for 1 minute.
3. Add chicken, rice, garam masala powder, salt and chicken stock powder and mix. Add 2½ cups water, mix, cover and cook for 8-9 minutes or till rice is done.
4. Garnish with a coriander sprig and serve hot with chilled yogurt.
