An extremely hearty dish, this is a must-try recipe.QUICK CHICKEN PULAOIngredients1½ cups Basmati rice, soaked for 15-20 minutes and drained2 boneless chicken breasts, cut into ½ inch pieces 2 medium onions, peeled and sliced3 tablespoons ghee 3 cloves2-3 green cardamoms 5 black peppercorns 1 bay leaf 1 teaspoon cumin seeds (jeera)1 tablespoon ginger-garlic paste 2-3 tablespoons yogurt½ teaspoon garam masala powderSalt to taste 1 chicken stock cube powderFresh coriander sprig for garnishingChilled yogurt for servingMethod1. Heat ghee in a deep non-stick pan. Add cloves, green cardamoms, peppercorns, torn bay leaf and cumin seeds and sauté till fragrant and cumin seeds change colour.2. Add onions and sauté on high heat for 2-3 minutes. Add ginger-garlic paste and yogurt and sauté on high heat for 1 minute.3. Add chicken, rice, garam masala powder, salt and chicken stock powder and mix. Add 2½ cups water, mix, cover and cook for 8-9 minutes or till rice is done.4.
