Restaurant Style Lahori Dal | Sanjeev Kapoor Khazana

Masoor dal cooked in proper rich restaurant style.

RESTAURANT STYLE LAHORI DAL

Ingredients

1½ cups whole red lentils (masoor dal), soaked for 2-3 hours
Salt to taste
¼ teaspoon turmeric powder
4-5 garlic cloves, finely chopped
3 green chillies, slit
¼ cup milk-cream mixture
3 tablespoons ghee
2 tablespoons garlic cloves, crushed
1 teaspoon cumin seeds (jeera)
1 large onion, finely chopped
½ teaspoon red chilli powder
½ teaspoon garam masala powder
1 teaspoon lemon juice
Ginger strips for garnishing
Melted ghee for garnishing

Method

1. Heat a pressure cooker. Add lentils, salt, turmeric powder and 1 cup water. Cover and pressure cook till the pressure is released 5-6 times.
2. Remove lid, add chopped garlic, 1 green chilli, milk-cream mixture, mix well and cook for a minute. Add ½ cup water, mix and simmer for 10-15 minutes. Remove from heat and set aside
3. Heat ghee in a non-stick pan. Add crushed garlic and sauté till the slightly browned.
4. Add cumin seeds and once they begin to change colour, add remaining green chillies and sauté for a minute.
5. Add onions, mix well and sauté for 1-2 minutes. Add salt, chilli powder, garam masala powder and mix well.
6. Add the cooked lentil mixture, mix well and simmer for 5 minutes. Add lemon juice and mix well.
7. Garnish with ginger strips and melted ghee and serve hot.
