Shrimp Linguine

Ingredients

1 pound linguine pasta
4 tablespoons salted butter
2 tablespoons olive oil
1 tablespoon minced garlic
1 pound shrimp peeled and deveined
1 teaspoon salt or to taste
1/2 teaspoon black pepper
1/2 teaspoon chili flakes
1/4 cup lemon juice
1 tablespoon lemon zest
2 tablespoons grated parmesan cheese
2 tablespoons chopped fresh parsley
1/2 lemon thinly sliced and halved

Instructions

1 Cook the linguine pasta in lightly salted water according to the package directions. When draining the pasta, reserve about 1/2 cup of the cooking liquid.

2 In a large saucepan, melt the butter over medium-high heat and add the olive oil. Stir in the minced garlic and shrimp. Season with salt, black pepper, and chili flakes. Cook the shrimp, stirring continuously, until they turn pink, about 2-3 minutes depending on the size of the shrimp.

3 Add the lemon juice and lemon zest to the saucepan, and let the mixture simmer for about 1 more minute. Stir occasionally as it cooks, then remove from heat.

4 Toss the cooked shrimp with grated parmesan cheese, chopped parsley, and lemon slices.

5 Add the cooked pasta and reserved pasta water to the skillet, and toss everything to coat evenly. Serve immediately.
