SINGAPORE HAWKER FOOD Chef Sham Vinegar Pig Trotters & Fish Maw Soup Chinatown Food Centre

You can't miss the two eye-catching stalls with their brightly-lit signboards. Humble and polite, the founder, Chef Sham, is a prominent local culinary figure. Even in his 70s, Chef Sham is still continuously looking for creative ways to refine his dishes.

The stall's specialty is their Vinegar Pig Trotters, tailored to suit the taste buds of Singapore locals. Tender pig trotters are braised in sweet vinegar. With a little tug using chopsticks, the gelatinous pork skin can be separated from the tender meat.

Another must-try is the Fish Maw Pig Stomach Chicken soup. The milky broth that takes several hours of simmering, is rich in collagen and flavourful. Ask for a second helping of the tasty broth, and the stall uncle will be most happy to serve you at no additional cost.
