Smoky Chicken Wings | Sanjeev Kapoor Khazana

Spicy chicken wings infused with the smoky charcoal flavour.

SMOKY CHICKEN WINGS

Ingredients

10-15 chicken wings
½ tsp dried mango powder (aamchur)
½ tbsp ginger powder
½ tsp red chilli powder
1 tsp chopped garlic
A sprig of thyme
1 tbsp oil
1 tbsp lemon juice
1 tbsp tamarind water
Salt to taste
1 tbsp dried mixed herbs
2-3 charcoal
1 tbsp butter
1 clove
Oil to drizzle

Method

1. Take chicken wings in a bowl. Add dried mango powder, ginger powder, red chilli powder, garlic, thyme, oil, lemon juice, tamarind water, salt and mixed herbs. Mix well. Create a well in centre and place a stainless steel bowl.
2. Heat charcoal till it turns red. Add the hot charcoal in the bowl. Add butter and immediately close with a lid to trap the smoke. Seal any perforation on lid with a clove. Set aside for 3-4 minutes.
3. Add the chicken wings in a non-stick pan, drizzle oil and fry till slightly golden brown. Cover and cook for 6-7 minutes on medium heat till oil separates.
4. Transfer in a serving platter.
5. Serve hot.
