Spanish Rice Pudding Arroz con Leche

Ever wondered how to make rice pudding? Today were making a Spanish version flavoured with cinnamon and lemon. Its an easy make-ahead dessert just like abuela used to make!

Ingredients:
100gm of Spanish short grain rice. (or Arborio rice)
1000ml milk
rind of half a lemon, in large strips
2 whole cloves
1 cinnamon stick
75gm sugar
teaspoon vanilla essence

Rinse the rice under cold water then drain it.

Take a two litre saucepan and put in the drained rice along with the milk.
Put in the lemon rind, clove and cinnamon and turn your heat on to medium, gentle heat and give everything a stir.

Put the lid on and keep an eye on it until there are small bubbles breaking the surface.
Once you have a gentle simmer, remove the cover and simmer for 35 minutes.
Turn the heat off and add 75gm sugar and the vanilla essence and then stir to dissolve the sugar.
Let it cool a few minutes before removing the cinnamon stick, the lemon rind and the cloves.

Pour cooled mixture into ramekins then cover and chill for at two hours.

To serve, sprinkle some ground cinnamon on top.
