Ingredients:

- 2 medium-sized potatoes
- 2-3 tablespoons of olive oil
- 2 teaspoons of salt
- Ice water

Instructions:

1. Begin by washing the potatoes and removing any dirt from the skins. You can peel them if you prefer, but I personally like to keep the skins on for the chips. But this time I have peeled.

2. Proceed to thinly slice the potatoes using a knife. It's ideal to slice them as thin as possible, almost like shaving the potato. The thickness should be around 1/8 to 1/16 inch.

3. Immediately place the sliced potatoes in a bowl of iced water. This step is important as it helps eliminate excess starch, resulting in crispy chips with those desirable air pockets.

4. Thoroughly dry both sides of the potato slices using a kitchen towel or paper towel. The drier they are, the better their crispiness will be.

5. Prepare a plate with parchment paper and arrange the potato slices on it, ensuring they do not touch. Lightly brush the slices with a small amount of olive oil, then sprinkle them with salt.

6. Microwave the potato slices on high for approximately 1.5 to 2.5 minutes on one side, and then about 1 to 2 minutes on the other side, or until they turn golden brown and crispy. The timing might vary based on your microwave's power. Look for a toasted brown color to know they're done.

7. Once cooked, sprinkle the finished potato chips with a bit of salt, and they are ready to be enjoyed.

8. If you're not eating the chips immediately, store them in an airtight container or a plastic bag to maintain their crispiness. Repeat the process with the remaining potato slices, transfer them to a bowl, and savor the delicious homemade chips!
