This homely and traditional recipe is slowly being forgotten! Its simple marinade for minced meat and water chestnuts adds completely new layers of texture to the softness of the squid. With another umami kicker, the salted egg yolk complements and elevates the flavours of this dish.

Don't have water chestnuts and salted egg yolk? Give them a miss but not this recipe! Steamed sotong stuffed with minced meat is simple and filling dish nonetheless.

Ingredients here
2 large squids (sotong)
30g ginger (cut into fine thin strips)
1 chilli (seeds removed, cut into fine thin strips)
1 stalk spring onions (chopped)
1 tbsp light soy sauce
1 tbsp chinese rice wine
150g minced meat

Marinade:
1 tsp sesame oil
tsp salt
tsp pepper
1 tsp oyster sauce
1 salted egg yolk
2 water chestnuts (chopped)
