Yummy chicken pakodas tossed in a flavourful stir-fry to enjoy it better!
CHICKEN PAKODA

Ingredients

250 grams boneless chicken breasts, cut into thin strips
1 cup shredded spinach leaves
1 cup gram flour (besan)
A large pinch of asafoetida (hing)
1 tsp red chilli powder
½ tsp turmeric powder
½ tsp cumin powder
2 tbsps rice flour
Salt to taste
1 tbsp oil + for deep frying
1 tsp mustard seeds
1 tbsp crushed garlic
3-4 green chillies, slit
3-4 red chillies, slit
¼ cp curry leaves
Chaat masala for sprinkling

Method

1. Take chicken in a large bowl. Add spinach, gram flour, asafoetida, red chilli powder, turmeric powder, cumin powder, rice flour and mix well. Add water and salt and mix till well combined.
2. Heat sufficient oil in a kadai. Slide in small portion of the chicken mixture into the hot oil and deep fry till golden brown and crisp. Drain on an absorbent paper.
3. Heat 1 tbsp oil in a non-stick pan. Add mustard seeds and let them splutter. Add garlic, green chillies, and red chillies and sauté for 1-2 minutes. Add curry leaves, chicken pakoda and salt and sauté well.
4. Serve hot sprinkled with chaat masala.
