Street Style Potato Bonda:

This street style potato bonda is very popular in Tamilnadu, India. The secret ingredient in this recipe is the dosa batter.This should be a well fermented one. This batter gives a unique tangy taste to this bonda and makes it crisp on the outer side. You can add baking soda as a substitute. But if you add baking soda , you will miss that unique taste.

Ingredients:

For potato mixture:
Potatoes-8
Oil- 2 teaspoon
Mustard seeds- 1 teaspoon
Green chillies-3
Onion(big)-1
Grated ginger-1 teaspoon
Turmeric powder-1 teaspoon
Salt-3/4 teaspoon
Hing/Asafoetida- A pinch
Curry leaves/ Coriander leaves
Lemon juice- 2 tablespoons (optional)

For batter:
Gram flour- 2 ladles
Rice flour- 1 ladle
Salt- 3/4 teaspoon
Hing- A pinch
Red chilly powder- 2 teaspoons
Dosa batter- 4 tablespoons
Water- As needed

For frying:
Oil- for frying



Directions:
1. Cut potatoes into half and cook over high flame for 20 minutes. Peel the skin and mash the potatoes. Set aside.
2. Heat 2 teaspoon oil. Add mustard seeds. Let them splutter.
3. Add green chillies, 1 teaspoon grated ginger and onion. Sauté onion until translucent.
4. Add mashed potatoes, turmeric powder, salt and hing. Combine everything well. Switch off the flame.
5. Add curry leaves or coriander leaves and 2 tablespoons of lemon juice(optional).
6. Take a small portion of this mixture and make it into round balls.Set aside.
7. Take gram flour, rice flour, salt,hing,red chilli powder and fermented dosa batter in a bowl.
8. Add water little at a time to make a slightly thick batter.
9. Heat oil over medium flame.
10. Dip potato into the batter and fry it in oil.
11. Deep fry until golden brown.

Serve with coconut chutney / ketchup.
