Pound then using a pestle-in a separate bowl Add palm sugar ,lemon juice and soy sauce. Mix well till the sugar is dissolved - add the garlic and chilli mixture and mix well-Add tomatoes. Stir.-Add the chopped long beans - Add shredded papaya. Lightly mix-Stir until all the ingredients are mixed well- Arrange on a serving dish and garnish with crushed roasted peanuts Thai zucchini Lasagna Recipe:Green zucchini 2 nosYellow zucchini 2 nosThai red curry paste :- 2 tbspChopped garlic 1 tbspChopped onions 2 tbspChopped galangal 1 tbspThai basil 6-7 leavesAubergine dices 1 cupBroccoli florettes 1 cupGreen and yellow bellpepper 1 cupOlive oil 2 tbspSalt to tasteFresh oregano few sprigsFresh thyme few sprigs Chings chilli vinegar 1 tspChings red chilli sauce 1 tbspChings soy sauce 2 tspCrushed black pepper a pinchGrated mozzarella cheese 1 cupBread crumbs 2 tbspWater to adjust consistency Method1. Cut the zucchini into thin slices using mandolin slicer. 2. Marinate the zucchini slices in olive oil, salt and crushed black pepper. Keep for 20 mins and grill on a grill plan. Keep aside3. In a pan heat oil, add chopped garlic, chopped galangal and chopped onions. Saute.4. Add red Thai curry paste. Saute.5. Add shredded basil, fresh oregano and fresh thyme. Saute.6. Add aubergines, bellpeppers and broccoli. Cook till done. Add water to adjust consistency 7. Add soy sauce, red chilli sauce and chilli vinegar . Add salt as per taste and stir. Keep aside.8. Grease a baking dish with olive oil, line zucchini slices followed with the gravy9. Repeat the same process once more. 10. Finally layer with zucchini slices. Spread grated cheese evenly and Sprinkle bread crumbs.11. Bake at 180 degrees for 15-20 mins. Serve Mi-sun thai CoolerWater 1 cupLemon grass chopped and crushed 1 stemKafir lime leaves 2 nosStevia natural sweetner 1 tspIce as per required Method1. Bring water to boil in a pot. Turn off the heat and add lemon grass, kafir lime leaves. Cover and brew for 5 minutes .2. Sieve the tea and keep it for cooling.3. In a blender, add the tea mix, stevia sweetner and ice. Blend4. Serve chilled.
