Green papaya salad Recipe:

Long green papaya 1/2 no
Garlic cloves 3 nos
Fresh red chilli 3 nos
Palm sugar 5 tbsp
Lemon juice 3 tbsp
Soy sauce 2 tbsp
Tomato quartered 1 no
Chopped Long green beans 3-4 nos
Roasted peanuts :- 15 gm

Method:
- In a mortar add garlic and chillies. Pound then using a pestle
-in a separate bowl Add palm sugar ,lemon juice and soy sauce. Mix well till the sugar is dissolved
- add the garlic and chilli mixture and mix well
-Add tomatoes. Stir.
-Add the chopped long beans
- Add shredded papaya. Lightly mix
-Stir until all the ingredients are mixed well
- Arrange on a serving dish and garnish with crushed roasted peanuts

Thai zucchini Lasagna Recipe:

Green zucchini 2 nos
Yellow zucchini 2 nos
Thai red curry paste :- 2 tbsp
Chopped garlic 1 tbsp
Chopped onions 2 tbsp
Chopped galangal 1 tbsp
Thai basil 6-7 leaves
Aubergine dices 1 cup
Broccoli florettes 1 cup
Green and yellow bellpepper 1 cup
Olive oil 2 tbsp
Salt to taste
Fresh oregano few sprigs
Fresh thyme few sprigs
Chings chilli vinegar 1 tsp
Chings red chilli sauce 1 tbsp
Chings soy sauce 2 tsp
Crushed black pepper a pinch
Grated mozzarella cheese 1 cup
Bread crumbs 2 tbsp
Water to adjust consistency

Method
1. Cut the zucchini into thin slices using mandolin slicer.
2. Marinate the zucchini slices in olive oil, salt and crushed black pepper. Keep for 20 mins and grill on a grill plan. Keep aside
3. In a pan heat oil, add chopped garlic, chopped galangal and chopped onions. Saute.
4. Add red Thai curry paste. Saute.
5. Add shredded basil, fresh oregano and fresh thyme. Saute.
6. Add aubergines, bellpeppers and broccoli. Cook till done. Add water to adjust consistency
7. Add soy sauce, red chilli sauce and chilli vinegar . Add salt as per taste and stir. Keep aside.
8. Grease a baking dish with olive oil, line zucchini slices followed with the gravy
9. Repeat the same process once more.
10. Finally layer with zucchini slices. Spread grated cheese evenly and Sprinkle bread crumbs.
11. Bake at 180 degrees for 15-20 mins. Serve

Mi-sun thai Cooler

Water 1 cup
Lemon grass chopped and crushed 1 stem
Kafir lime leaves 2 nos
Stevia natural sweetner 1 tsp
Ice as per required

Method
1. Bring water to boil in a pot. Turn off the heat and add lemon grass, kafir lime leaves. Cover and brew for 5 minutes .
2. Sieve the tea and keep it for cooling.
3. In a blender, add the tea mix, stevia sweetner and ice. Blend
4. Serve chilled.
