Tawa Baingan | Gayathiri's Cookbook

Tawa Baingan is an another amazing dish that we enjoyed at Rasika’s (Wahington), just like the Palak Chat.

Made with mashed potatoes and eggplants dressed with a jaggery coconut sauce, you can serve this as a starter or as a main dish.

Try this awesome recipe to impress your guests.

Do try it at home, it’s easy and very delicious.


Ingredients:

For Filling:

Potatoes- 4
Oil- As needed
Jeera- 1/2 teaspoon
Green chillies- 3
Onion-1
Ginger- A small piece
Tomatoes-1/2
Turmeric powder-1/2 teaspoon
Salt-3/4 teaspoon
Red chilly powder- 1/2 teaspoon
Chat masala powder- 1/2 teaspoon
Lemon juice- 1/2 teaspoon
Coriander leaves-for garnishing


For Dressing:

Jaggery-2 oz
Water- 2 teaspoon
Coconut milk- 1/4 cup
Salt- a pinch
Red chilly flakes- 1/4 teaspoon
Lemon juice- 1/2 teaspoon
Chopped mixed nuts- As needed

For Eggplant:

Eggplant(big)-1
Turmeric powder- 1/2 teaspoon
Salt- 3/4 teaspoon
Black pepper powder- 1 teaspoon
Red chilly flakes- 1/2 teaspoon
Chopped garlic cloves- 1/2 teaspoon
Olive oil- 1/4 cup


Directions:

For Filling:

1. Boil potatoes until soft. Mash it and set aside.
2. Heat 2 tsp oil . Add Jeera, green chillies, onion and ginger. Sauté until onion is translucent.
3. Add tomatoes, turmeric powder and salt. Cook until soft.
4. Add mashed potatoes and mix it well.
5. Then add red chilly powder and chat masala powder. Sauté until everything blends together. Switch off the heat.
6. Add lemon juice and coriander leaves. Set aside.

Filling is ready!!


For Dressing:

1. Mix jaggery with water and cook over medium flame.
2. Once the jaggery is dissolved add coconut milk. Let it boil for 1 minute.
3. Add a pinch of salt, red chilly flakes. Switch off the heat.
4. Add mixed nuts and lemon juice.


Dressing is ready!!


For Eggplant:

1. Cut eggplant into thin slices.
2. Mix olive oil, garlic, salt, pepper powder, turmeric powder and red chilly flakes in a plate.
3. Coat eggplant with this mixture.
4. Let it marinate for 30 minutes.
5. Sauté eggplant over medium heat. Cook both sides until golden brown.


Serving:

1. Place the large eggplant at the bottom.
2. Top with a spoonful of mashed potatoes.
3. Build the layers until you have 4 eggplants and 3 mashed potato fillings.
4. Drizzle the sauce all over .
