INDIAN SPICED POTATO AND LEEK SOUP:In this episode of In the Food52 Kitchen With, we are joined by MasterChef contestant and cookbook author Hetal Vasavada to make this comforting Indian spiced leek and potato soup. Now that its #soupseason, we are all looking for unique takes on the classic cozy soups we know and love.This is a mashup of a cozy potato and leek soup and all the spices typically found in Gujarati dal, a lentil soup. Gently spiced with cumin, coriander, curry leaves, and more, this flavorful soup gets its creaminess (and lightness) from whole milk. (Nut-based milks tend to add an additional layer of flavor, which will not pair well with the soups spices.) The soup is finished with a tempered spice oil, or vaghar (also called tadka).
