Thengai Ellu Sadam & Mor Kootu Lunch Combo by Meenama!
Simple sesame seeds or Til is a superfood and it can be included daily in our diet. However in case thats not possible #Meenama has #ThengaiElluSadam with #MorKootu to accompany! Lets jump to the recipe straight away!
Thengai Ellu Sadam:
For grinding:
White til - cup
Urad dal - 2 tsp
Red chillies - 4
Few drops of oil
Method:
Heat oil
Add urad dal, red chillies and stir fry over medium flame
When urad dal turns light golden add the white til or ellu and fry till the white til pops
Set aside and allow to come to room temperature
Grind coarsely and keep aside
Ingredients for tempering Thengai Ellu Sadam:
Cooked rice - 1 cup
Few tsps til oil or coconut oil
Mustard seeds - 1 tsp
Urad dal - 1 tsp
Green chillies - 2
Fresh coconut - cup
Curry leaves to garnish
Method:
Chop green chillies
Heat oil
Splutter mustard seeds
Simmer flame and add urad dal
When Dal turns light golden add the chopped green chillies
Add the fresh coconut and saut till coconut turns rich golden
Add curry leaves and toss over the heat
Switch off flame
Now spread the cooked rice in a plate
Add salt to taste
Add the coconut tempering
Add the White Til ground mix
Toss everything well together
Add fried cashews for garnishing
Mor Kootu
Ingredients:
Chopped chow chow and carrots if reqd
Fresh coconut - cup
Red chillies - 3
Tur dal - 1 tsp
Beaten curd - as reqd
For tempering:
Oil - 2 tsp
Mustard seeds - tsp
Curry leaves as reqd
Method:
Cook the vegetables till reqd
Meanwhile grind Tur dal coconut and red chillies to a paste
Add with beaten curd and blend well together with a spoon
Add it to the cooked Chow Chow
Add salt to taste
Simmer flame and allow cooking together till bubble in the edges of the Mor Kootu
Now heat oil
Splutter mustard seeds
Add curry leaves sautadd tempering to the Mor Kootu
