Tomato Rice with Soya Chunks
Tomato Rice is not only delicious but healthy too.
Ingredients for the Masala Mix of Tomato Rice:
Ingredients for Tomato Rice:
Tomatoes - 4 or 5 medium or tomato paste 2 tsp
Soya chunks - cup
Green chillies - 1 big
Ginger - 1 inch
Basmati rice - 1 cup
Oil and ghee - as reqd
Mustard seeds - 1 tsp
Jeera/cumin seeds - 1 tsp
Chana dal - 1 tsp
Asaefotida - tsp
Sambar powder- 1
Salt as reqd
Method to make Tomato Rice:
Wash and soak basmati rice in water and keep aside
Chop onions, slit green chillies and chop ginger finely
Pure 5 or 6 tomatoes in blender and keep aside or use readymade tomato paste
Chop the remaining 2 tomatoes into big chunks
Soak soya chunks in salted hot water for at least an hour
Take a broad pan, heat oil and ghee
Splutter mustard seeds and roast jeera
Add chana dal and roast to golden
Now, add the onions, slit green chillies and chopped ginger
Stir fry everything
Saut everything till the onions are lightly golden
Now add the Tomato pure
Add little water if the tomato paste is too thick
Add the soya chunks after squeezing out of water
Add cup of water
Add cup of coconut milk too
Add 1 tsp of sambar powder
Cover and cook till everything comes to a boil
Now, add the chopped tomatoes and let everything come to a boil
Close for a min or two so that the tomato chunks become soft and mushy
Open and add salt to taste
Add the drained basmati rice and cook together for a min
Turn the flame to lowest and cook till done
Toss the Tomato rice now then lightly while cooking
