We Tried Making Roast Pork And Mookata at Home During Circuit Breaker Eatbook Cooks EP 17

In this episode, Qing and Chiara are challenged to whip up their food cravings at home using only basic equipment. Lets see if they manage to satisfy their cravings of mookata and roast pork!

RECIPES

CRISPY ROAST PORK
Yield: Serves 2
Cooking time: 90 minutes

Ingredients:
Pork belly, skin on
Coarse sea salt

Meat marinade:
1 tbsp Shaoxin wine
1 tsp five spice powder
1 tsp pepper
1 tsp salt
1 tsp sugar

Directions:
1) Cut your pork belly into slabs of your desired size/portions.
2) Score the skin with a knife, without cutting into the fat or meat.
3) Rub the meat marinade all over the meat, excluding the skin.
4) Massage the skin marinade into the scores made on the skin
5) Wrap the marinated pork belly in aluminium foil, leaving the skin exposed.
6) Leave in the refrigerator for at least 4 hours to marinate.You can also marinate it overnight.
7) Further score the skin after refrigerating.
8) Salt-bake by covering the skin with a thick layer of salt.
9) Pre-heat your toaster oven (or your oven at 180C)
10) Place pork belly into the toaster oven with both top and bottom heating elements for 30 mins. (Or 60 mins at 180C in an oven.)
11) Remove the layer of salt from the skin.
12) Place pork belly back into the toaster oven. Leave for another 30 mins. (For ovens, leave it at the grill or broil options)
13) Cut and serve.

MOOKATA MEAT MARINADE

Marinade 1
Meat of choice
2-3 tsp chopped garlic
cup lemon juice
Salt and pepper

Marinade 2
Meat of choice
1 tbsp fish sauce
1 tbsp rice wine
1 tsp sesame oil
1 tbsp white sugar
1 tsp minced garlic
2 tsp minced fresh ginger root
2 tsp honey

Marinade 3
Meat of choice
1 tsp oyster sauce
1 tsp soy sauce
1 tsp oil
1 tbsp egg white
tsp cornstarch

Directions
1) Prior to marinating meat, slice meat of choice into thin slices.
2) Separate sliced meat into groups, each for 1 marinade of choice.
3) Massage marinade into meat, and let it sit in a ziplock bag for at least 3-4 hours, or overnight in the refrigerator.
