Turkish Vegan Zucchini Dish With Olive Oil & Tomatoes

Zucchini dish with olive oil and tomatoes. It is a very easy-to-make, healthy, vegan recipe that is made with olive oil ( In Turkish we say "zeytinyal" ) You can serve it warm or cold as a side dish or as a light main dish with yogurt and slices of bread.
Ingredients for Zucchini With Olive Oil:
About 5 tbsp olive oil
1 big onion
1 big ripe tomato
5-6 medium zucchinis
2 tbsp rice
3 cloves of garlic
salt to taste
1/4 cup water
half bunch of parsley

Serving suggestion:
Drizzle more olive oil, and plain yogurt on the side and sprinkle fresh chopped parsley
