UNDEFEATED 5KG HOKKIEN NOODLE CHALLENGE! Eaten in 20 Minutes! Singapore Street Food

For this episode, we headed down to Ebi Bar at Cuppage Plaza to attempt a 25-minute UNDEFEATED 5kg Hokkien Noodle Challenge! Ebi Bar specialises in prawn broth-based dishes such as Pao Fan and Prawn Noodles, with their homemade stock cooked for over 10 hours with 40KG of prawn shells used per batch.

They recently released a new menu item, Hokkien Mee, to great fanfare and demand and decided to challenge me. It was a race against the clock with 5kg of Hokkien Mee to finish in a short 25-minute time limit. The prize was an exclusive pair of Nike x Off White Dunks, which I am giving away to you guys! Ebi Bars Hokkien Noodles blended traditional and modern elements, incorporating both old school sea cucumbers and hipster ikura into a dish already very close to the hearts of Singaporeans. It was on the wetter side, using thick yellow and white noodles cooked in their rich prawn stock. Normally, pork lard is used for flavour, but here, they use deep-fried chicken skin. The plate was decked out with large deshelled prawns and squid rings cooked together with the noodles and with even bigger chao da (burnt) prawns with shells on crowning it.

The Hokkien Noodles tasted exactly as it smelled, rich with prawn flavour and full of umami. The chicken skin added excellent hits of saltiness to the heavy combination of flavours already going on in the noodles and together with the ikura, ensured every bite had an additional burst of flavour. The seafood were cooked just right and provided a decent amount of protein. The chao da prawns were not actually burnt, but charred with a torch, giving a slight but pleasant smoky aroma and flavour. The noodles had a wonderful wok hei component to it, a testament to the chefs wok skills. They have an in-house chilli is that supposedly wicked spicy, but I refrained from trying it.

I completed this challenge in just over 20 minutes, winning the shoes. Ebi Bar is worth the visit, serving excellent modern takes of traditional Singaporean cuisine. I could smell the rich prawn broth aroma long before the restaurant was even in view when I headed there. Besides the Hokkien Mee, they have interesting sides like Salted Mackerel Fried Chicken and other mains like Prawn Pao Fan. They even give away a portion of their profits to charity and use no pork in their dishes. Be sure to head down there after work for a fulfilling meal washed down with a few beers!
