Vada Pav Sliders Family Food Tales Sanjeev Kapoor Khazana

VADA PAV SLIDERS

Ingredients

6-8 whole wheat slider buns
Batter
1 cup gram flour (besan)
tsp turmeric powder
Salt to taste
tsp baking soda
tsp red chilli powder
Vada
1 tbsp oil
1 tsp mustard seeds
A pinch of asafoetida (hing)
12-15 curry leaves
1 small onion, finely chopped
1 tbsp garlic-green chilli paste
tsp turmeric powder
A pinch of red chilli powder
Salt to taste
3-4 medium potatoes, boiled, peeled, and mashed
8-10 green chillies
To apply
Green chutney as required
Red chilli-garlic chutney

Method

1. Take gram flour in a large bowl, add turmeric powder, salt, baking soda, red chilli powder and 1/3 cup water and whisk till a smooth batter is formed.
2. Heat oil in a non-stick pan. Add mustard seeds and let them splutter. Add asafoetida, curry leaves, and onion and saut till translucent.
3. Add garlic-green chilli paste and mix well. Cook for 1 minute.
4. Add turmeric powder, red chilli powder, salt and mix well. Transfer in a bowl and allow to cool slightly.
5. Add potatoes and mix well.
6. Heat sufficient oil in a kadai.
7. Take small portions of the potato mixture and shape each portion into a ball and slightly flatten it. This is a vada. Add this into the batter and gently slide them into the hot oil and deep fry till golden brown. Drain on an absorbent paper.
8. Make small slits on the green chillies and gently slide them into the hot oil and deep fry for a few seconds and drain on the absorbent paper.
9. To make the sliders, slit the pavs, apply some green chutney on the base half of the pav, sprinkle some red chilli-garlic chutney, place a vada on it and cover with the other half of the pav. Serve hot with fried green chillies.
