INGREDIENTS

Ajowan - 1/4 cup
Curry Leaves - 1/4 cup
Dried Chilies - 4-5
Black Gram - 2 tbsp
Coriander Seeds - 2 tsp
Cumin Seeds - 1 tsp
Pepper - 1/2 tsp
Tamarind - 10 grams
Oil - tsp
Salt - as needed

Heat a pan and add 2 tbsp black gram

Roast until it changes colour

Move it into a different plate

To the pan, add 2 tsp coriander seeds, 1 tsp cumin seeds, 1/2 tsp pepper and roast until coriander seeds change colour

Move it into a plante

Add 1/4 cup ajowan and roast until it gives ut a nice flame

Roast on low flame

Move it into a plate

Add 1 tsp oil to pan

Add 4-5 dried chilies and fry until it changes colour slightly

Add 1/4 cup curry leaves

Fry until curry leaves turn crispy

Fry on low flame

Cut off the stove and let the ingredients cool down

To a mixie jar, add the fried dried chilies, curry leaves, salt to taste, 10 grams tamarind and grind it

Add the other roasted ingredients and grind it into a powder

Store it in a glass jar

Vamu Karam Podi is ready to serve!
