Vankaya Ellipaya Karam

Today, let's see how to make brinjal with garlic chili. It's a great combination and brinjal lovers are sure to savour it because of its spicy taste.

Here I used 1/4 kg brinjals

Make vertical cuts in them land divide it into 4 parts like we do for gutti vankaya or masala stuffed brinjal

Lets fry them next

Put the cut brinjals in salt water so they don't turn brown

Heat 3 tbsp oil in pan

Add cut brinjals and fry

Flip and fry on low flame until they are cooked on all sides

Lets prepare the garlic chili now

To a mixie jar, add garlic cloves, 1 tsp cumin seeds, salt to taste, 1 1/2 tsp chili powder, 1/4 cup curry leaves and grind it into a paste

Cook this prepared masala in a pan

Add a little water, 1/4 tsp turmeric powder and cook for a minute

Add the cooked brinjals and stir

Close lid and cook on low flame for 3-4 minutes

As oil starts to float, sprinkle some coriander leaves and cut off the stove.

Serve with rice or roti!

Brinjals - 1/4 kg
Garlic Cloves - 12-14
Curry Leaves - 1/4 cup
Cumin Seeds - 1 tsp
Chili Powder - 1 1/2 tsp
Turmeric Powder - 1/4 tsp
Coriander Leaves - 1/4 cup
Salt - as needed
Oil - 3 tbsp
