Vegan Thai Green Curry in Instant Pot

14 oz Tofu firm pressed and cut into cubes
19 oz Coconut Milk 1 large can
3 tbsp Green Curry paste
2 tbsp Oil
1 Bell Pepper cut into 1" pieces
1 Carrot sliced
1 cup Broccoli cut into pieces
2 Scallions or Green Onions cut into 2" pieces
1 tsp Sugar
1 tbsp Lemon juice
1/4 cup Roasted Cashews (optional)
Basil leaves to garnish
