Kids will love the texture of the cheese sauce topped rice, as well as the colourful garnish of crisp, stir-fried veggies. While this is best had hot, it can also be packed for snack-time.Preparation Time: 15 minutes. Cooking Time: 19 minutes. Serves 3. For the rice½ cup rice (chawal), soaked for 15 minutes and drained1 tbsp butter1 tsp cumin seeds (jeera)¼ cup finely chopped onions1 tsp finely chopped garlic (lehsun)Salt to tasteFor the cheese sauce2 cheese slices, broken into pieces1 tsp butter1 tsp plain flour (maida)¾ cup milkSalt to tasteFor the stir-fried vegetables½ cup chopped and boiled French beans½ cup chopped and boiled carrots½ cup boiled sweet corn kernels (makai ke dane)1 tsp butterSalt to tasteFor the rice1. Heat the butter in a broad non-stick pan and add the cumin seeds.2. When the seeds crackle, add the onions and garlic and sauté on a medium flame for 1 minute.3. Add the rice, salt and 1¼ cups of hot water, mix well and cook on a medium flame for 8 to 10 minutes, or till the rice is cooked, while stirring occasionally. Keep aside.For the cheese sauce1. Heat the butter in a broad non-stick pan, add the plain flour and cook on a medium flame for a few seconds.2. Add the milk, mix well and cook on a medium flame for 1 minute or till the sauce is thickens, while stirring continuously.3. Add the cheese slices and salt, mix well and cook on a medium flame for 1 to 2 minutes or till the cheese melts, while stirring continuously. Keep aside.For the stir-fried vegetables1. Heat the butter in a broad non-stick pan, add the French beans, corn, carrots, sweet corn and salt and sauté on a medium flame for 1 to 2 minutes. Keep aside.How to proceed1. Reheat the rice in a broad non-stick pan, add the cheese sauce and stir-fried vegetables, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. 2. Serve hot.
