While rains are just round the corner a perfect soup is all that one can ask for to complete the cool and refreshing rainy mood. Learn how to make this simple yet delicious Vermicelli Soup on Rajshri Food.

Ingredients:

100g Rice Vermicelli
3 to 3 1/2 tbsp Cornflour
2 Tsp Soya Sauce
2 Tsp Chilli Sauce
1 1/2 Tsp Chilli Oil
100g Carrots
1 Tbsp Brown Vinegar
100g Cabbage
10 Spinach Leaves
Some Broccoli Florets
6 cups of vegetable stock
1 tsp Sugar
Salt to taste

Method:

- Heat some oil and once the oil is hot, add thinly sliced carrot, cabbage, few broccoli florets and few spinach leaves.
- Add vegetable stock.
- Add soya sauce, chilli sauce, vinegar, sugar, salt.
- Mix cornflour in water or vegetable stock.
- Add the cornflour mixture to the soup when it comes to boil.
- Allow the soup to boil for 3 to 4 minutes.
- Fry some rice noodles in oil.
- Serve the soup hot and place the vermicelli on top.
- Sprinkle chilli oil on the top.
- The delicious soup is ready to eat!
