Wait for it!!!

Im back with another One Pan Italian Chicken meal prep!

This zesty chicken meal is super simple to make and has an easy list of ingredients. Idk about yall, but if its too complicated- Im likely to not make it

Ingredients
2 lb chicken breast
1 can cannellini beans
1 cup artichokes
1 cup chopped pancetta
1 cup bone broth
2 shallots
1 lemon
4 garlic cloves, chopped
4 oz goat cheese
1 large package of arugula
Feta crumbles for topping

Directions

In a large saucepan, cook the chicken in olive oil with salt and pepper.
Once it has cooked through, remove the chicken from the pan and set to the side. In the same pan, saute the shallots and garlic cloves.
Next, add in the pancetta, bone broth and arugula.
Let it cook until the arugula has wilted.
Then add in the goat cheese, beans, artichokes, and lemon juice.
Add in the chicken and let everything cook together for 5 minutes.
Remove everything from the pan and set aside to cool.
Distribute the food into your meal prep containers and top with the feta.
Enjoy throughout the week!
